Chicory
Chicory is a perennial plant from the dandelion family that is naturally distributed throughout Europe. While its leaves are used in the preparation of salads and its characteristic blue flowers are used to decorate dishes, its root is also used as an ingredient in the production of coffee substitute. During the autumn harvest, the root is carefully collected, cleaned and chopped to allow for uniform roasting.
